Chicken curry and coconut milk

Ingredients

  • 700g chicken or turkey breast fillets
  • Vegetable oil
  • 1 small red and green pepper
  • 1 beautiful tomato
  • 3 carrots
  • 2 large cloves of garlic – 1 onion
  • 1 cm fresh ginger
  • 30cl of coconut cream
  • 20cl coconut milk
  • 3 cases Madras Curry Meibon
  • Sales 
  • fresh coriander

Preparation

  1. Gently sauté the onion and garlic in oil. Set aside.
  2. Brown the meat. Set aside.
  3. Sauté the sliced peppers and carrots for 5 mins.
  4. Put it all back in the pan with the sliced tomato and grated ginger.
  5. Add coconut milk and cream, and the spices Madras curry, the salt and chopped coriander.
  6. Simmer covered over a low heat for 30 to 40 minutes. 
  7. Before serving, sprinkle with fresh coriander and serve immediately!
