Ingredients
- 700g chicken or turkey breast fillets
- Vegetable oil
- 1 small red and green pepper
- 1 beautiful tomato
- 3 carrots
- 2 large cloves of garlic – 1 onion
- 1 cm fresh ginger
- 30cl of coconut cream
- 20cl coconut milk
- 3 cases Madras Curry Meibon

Preparation
- Gently sauté the onion and garlic in oil. Set aside.
- Brown the meat. Set aside.
- Sauté the sliced peppers and carrots for 5 mins.
- Put it all back in the pan with the sliced tomato and grated ginger.
- Add coconut milk and cream, and the spices Madras curry, the salt and chopped coriander.
- Simmer covered over a low heat for 30 to 40 minutes.
- Before serving, sprinkle with fresh coriander and serve immediately!
