What is ground fenugreek?

The ground fenugreek It is made from the dried and finely ground seeds of the fenugreek plant, a small plant belonging to the same family as lentils and chickpeas. Although native to the Middle East and South Asia, it is now grown in many parts of the world, including India, Pakistan, Morocco, and France. Once harvested, we dry and finely grind the seeds to obtain this golden powder with a warm, slightly bitter aroma that we offer you at Madras Épices.

What does ground fenugreek taste like?

Ground fenugreek has a pronounced, warm, and slightly bitter flavour, with a sweet note reminiscent of maple syrup. Unlike more subtle spices, it has a very distinct character. In short, a few pinches are enough to transform a dish; it's a spice to be used with care so it doesn't overpower.

How to use ground fenugreek?

You've bought ground fenugreek but don't know how to use it? Don't panic, here are all the ways to incorporate it into your recipes.

In practice, ground fenugreek can be added to a wide variety of dishes. Indian cuisine, it is essential in dry curries, spiced lentils and vegetarian dishes. Similarly, in Ethiopian and Maghrebi cuisine, it is part of berbere, ras-el-hanout and many slow-cooked stews.

It is also found in many homemade spice blends such as [ras el hanout], [berbere] or [panch phoron]. Thus, you can also use it to flavour your breads, your pickles and your marinades!

Moreover, in Vegetable cuisine, it is particularly valuable as it brings a slightly toasted, milky taste that replaces certain animal flavours. Finally, a few pinches are enough to enrich the base of a broth, soup or stew.

What dosage? Start with ¼ teaspoon for a 2-person dish; fenugreek is potent, so use it sparingly! It pairs perfectly with [cumin], [ground coriander], [turmeric], [ginger], and [sweet chilli].

💡 Tip: To soften its bitterness, sauté it for a few seconds in a hot pan before adding it to your dish.

What are the benefits of ground fenugreek?

Fenugreek, a plant at the heart of history

Fenugreek is one of the oldest plants used by humankind. Archaeologists have found its seeds in Egyptian tombs dating back over 4,000 years, where it was used as a spice, a medicinal plant, and an ingredient in funeral rituals. Indeed, the ancient Greeks prescribed it to relieve digestive disorders, while the Romans used it to feed and strengthen their soldiers.

Consequently, in the Middle Ages, it found its way into monastery gardens and apothecaries' cabinets, who recommended it for soothing inflammations and strengthening natural defences. Today, it is cultivated in countries such as India, Pakistan, Ethiopia, Morocco, and even France. In powdered form, it retains all the essence of its history while adapting perfectly to modern cuisines.
