Crème brûlée with Meibon spices - A touch of yesteryear for a timeless dessert

A bit of history…

Crème brûlée, this delicious dessert with Melting centre and thinly caramelised crust, remains charming through the centuries. Its origin is disputed between France, Spain (where it is similar to crema catalana) and even England with the famous Trinity Cream from the 17th century. Yet, it was in France that it truly made its mark.

Today, we're revisiting this recipe with a subtle touch of Meibon spices, for an even more fragrant and comforting version, reminiscent of the sweets of yesteryear.

Materials:

  • 4 ramekins
  • A dish for bain-marie cooking, the oven's roasting pan will do the job!
  • A kitchen blowtorch or the grill mode of your oven

🛒 The ingredients (for 4 crème brûlées):

  • 250 ml of full-fat liquid cream (35% fat%)
  • 125 ml of milk
  • 4 egg yolks
  • 1 jar Meibon Crème Brûlée spice

👩‍🍳 Step-by-step crème brûlée preparation:

1. Prepare the cream attachment

In a saucepan, heat the cream and milk. simmer. Let cool slightly.
Meanwhile, in a salad bowl, whisk the egg yolks with ¾ of the Meibon Crème Brûlée spice pot until a homogeneous mixture is obtained.

2. Mix gently

Pour the hot cream in gradually over the egg yolks, stirring constantly to prevent them from cooking too quickly.

3. Prepare the bain-marie

Divide the preparation into ramekins. Place them in a large dish and pour hot water around them (halfway up the ramekins).

4. Cook slowly

Bake at 160°C for 25 minutes. The cream should be set and slightly wobbly in the centre.

5. Allow to cool and refrigerate

Remove the ramekins from the water bath and let them cool before placing them in the refrigerator to At least 4 hours.

6. The finishing touch: caramelisation

Lightly dust your creams with Spiced crème brûlée remaining (or Crazy Sugar) and caramelise them with a kitchen torch or under a preheated oven grill (watch carefully to avoid burning them too quickly).

Tips and variations

For an even more velvety texture, you can strain the preparation before pouring it into the ramekins.

This crème brûlée is perfectly accompanied by a Crispy biscuit or some red fruits.
